Grapes used: Corvina and Corvinone 80%, Rondinella 20%

Recioto "Campogerico" is a sweet, ancient wine and a typical classic Valpolicella. It has a sweetness which immediately envelopes the palate. Clean and harmonious, the nose is of pure, ripe fruit and notes of cherry compote and red fruit in general. It has an impenetrable dark, ruby-red colour with a slightly purple hue. Shelf life: 10-15 years. Serving temperature: 14/16°C.

A SWEET NECTAR: THE RESULT OF THE METICULOUS SELECTION OF GRAPES

Recioto “Campogerico” is produced following the ancient method of drying grapes: as for Amarone, also for Recioto, we select the best bunches, which are then placed with extreme care in wooden slatted crates and left to dry a long time. The grape drying room is equipped with windows for natural ventilation.

THE SICRET OF OUR RECIOTO.....

With the pressing of the grapes after the long drying period, the must ferments at a controlled temperature for several weeks. While the skins remain immersed in the must they are pressed twice daily. The wine becomes sweeter and is then filtered from the yeast to stop the fermentation and left to age for approximately one year in a large 20 hl cask made of French oak.

DESSERT WINE: DRY PASTRY AND DARK CHOCOLATE

For those who love sweet flavours, you cannot miss trying our Recioto Classico DOCG: it can be enjoyed in combination with a classic pastry or in contrast with the bitterness of 85% minimum dark chocolate. The sweetness of the Recioto, with notes of cooked cherry jam and currants, immediately envelopes the palate, with good acidity, making it an enjoyable drink without being sickly. The soft warm finish is a surprise!

Finding a match in general for Recioto is not difficult: try it with dry pastries: for example, with Nadalin, the ancestor of Pandoro. But it is also enhanced by the excellent Monte Veronese DOP cheese, produced in the alpine pastures in nearby Lessinia.
